Kañiwa (pronounced ka-nyi-wa) a relative of quinoa, grown in Bolivia, is the newest gluten-free super grain.  It’s an excellent source of protein, fiber, iron, zinc, calcium, and antioxidants.

This dark reddish-brown seed is about half the size of a quinoa seed, cooks faster, and contains even more protein, antioxidants and iron than quinoa!  Not only that but kañiwa is easier to process due to the absence of saponins, the coating that gives quinoa a slightly bitter flavor if not rinsed properly.
